Potato Meatballs as you can tell have parts meat and potatoes in it. The potatoes will add some softness to the meatballs and also help keep them together. Overall they will stay moist and won’t taste dry. This recipe is a good alternative with those who can’t eat gluten and look for a bread substitute.

Potato Meatball Ingredients

Ground Beef/Pork: It is up to you what you prefer. I used half and half for this recipe and it came out well. Another reason why I chose half beef and pork is that the ground meat is cheaper then doing 100 % ground beef. I chose half and half because pork can add some fat to the meatball.

Onion: Use yellow onion or white onion. Either way you will grate your onion finely and it will disintegrate in the meat mixture.

Potatoes: I went for firm potatoes and grated them to the finest setting possible.

Garlic: You can experiment with the amount. Two garlic gloves gave me just the right aroma. I used finely minced or grated garlic.

Salt: Coarse Sea salt should work well with this.

Black Pepper: Black pepper has a spicier taste and fits well with the potato.

Egg: Mediums sized egg for the meat mixture.

Potato Meatballs

Simple juicy meatball recipe without breadcrumbs. The potatoes will keep your meatballs moist and act as binder for the mixture. I like to dip them in mustard and eat them like they are or you add them to your tomato sauce with spaghetti.

Ingredients

  • 500g ground beef/pork
  • 1 medium onion
  • 2 small potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic
  • 1 egg

Instructions

  1. Put your ground beef/pork into a bowl.
  2. Grate your potato on the finest setting and squeeze out the liquid. Add them to you your meat.
  3. Grate your onion and garlic and add to your meat.
  4. Add your egg to a small bowl and scramble it. Once scrambles add to the meat.
  5. Season your meat and mix it thoroughly by hand until everything is evenly dispersed.
  6. Form 20 little meatballs out of your mixture.
  7. Add some oil to your pan and fry them for about 10 minutes. Turn them halfway.
  8. Let them cool down or add them to your favorite sauce.
