Potato Leek soup is something I just love to make, if I want something creamy with texture. Some people really like soups with broth with a minimal content like veggies. From my experience living in Romania, I ate a lot of soups with just broth and some veggies or meat and never felt satisfied.

I guess it comes down to preferences, but as a German I like to eat thicker soups. It does depend where you lived on Germany, but I like to have a proper soup that fills me up.

If you want a meatier soup out of this, than add ground beef into this soup and I promise it will be worth it! For this recipe I was going for a budget friendly approach.

Potato Leek Soup Ingredients

Potatoes: Choose a firm cooking potato with less starch. Starchier potatoes are good for fries or mashed potatoes, but not for this potato leek soup recipe.

Leek: Leeks are luckily very cheap vegetables and can enrich the flavors of your soup. Cut off a third of the top of your leek, because the are quite tough.

Onion: Yellow onion or white onion works well for this dish.

Cubed Bacon: The bacon flavor is up to you. This bacon was normal salt cured bacon, but hickory smoked or other bacon works, too.

Milk: Use full fat milk here, since you want to taste a rich flavor from eating this soup.

Chicken/Beef Broth: Broth adds some saltiness to this dish and some meat flavor.

Potato Leek Soup

Creamy Potato Leek that is nice during winter time or for comfort. This soup takes about 30 mins to cook, since the potatoes are cut into small cubes.

Ingredients

  • 1 kg potatoes
  • 1 big leek
  • 1 big white onion
  • 250 g cubed bacon
  • 750 ml milk
  • 250 ml chicken broth
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoon salt
  • 2 tablespoon oil

Instructions

  1. Peel, clean and chop your potatoes into small sized cubes.
  2. Cut your leek in half and clean the layers thoroughly or else you will have dirt in your soup. Slice the leek into slices.
  3. Peel and chop your onion into cubes.
  4. Into a 2 liter pot add your oil, bacon, onions and leek and sweat your vegetables for 8-10 minutes.
  5. Add your potatoes, seasoning and liquids to the pot.
  6. Cook on medium high for 30 minutes, if you cook it on high the milk will split and the texture won’t be pleasant.
  7. Serve with croutons or bread.
