I have visited and lived in several countries and found that filled peppers are a common dish. This version is a combination of the flavors I have found over the years. I do recommend cooking these in an Instant Pot, since it is meant to be quick and feed a family.

Instant Pot Filled Peppers

Instant Pot filled peppers are easy and quick to make. Some like to cook the meat ahead, but I like to put all the ingredients in one pepper.

Ingredients

Units Scale
  • 1/2 kg minced meat (pork or beef)
  • 5 yellow bell peppers
  • 1 big onion
  • 160 g white rice
  • 1 teaspoon salt
  • 1/2 teaspoon sweet paprika powder
  • 1 teaspoon oregano
  • 4 cloves garlic
  • 1/2 teaspoon black pepper

Sauce

  • 500 ml tomato sauce
  • 4 tablespoon flour
  • 1 tablespoon salt
  • 2 tablespoon sugar
  • 400 ml water

Instructions

  1. Core your bell peppers and wash them thoroughly.
  2. Wash your rice until the water runs clear.
  3. Cut your onions into small cubes.
  4. In a big bowl add your minced meat, onion, pressed garlic, rice and your seasoning. Mix it all by hand until everything is well incorporated.
  5. Stuff your bell peppers with the meat filling and place them into your Instant pot.
  6. Make your tasty tomato sauce by combining your tomato sauce, salt and sugar together. Mix the flour with the water until you have no lumps and add them to your tomato sauce,
  7. Pour your tomato sauce over your filled bell peppers and close the lid. Set your Instant Pot to “Pressure Cook” on high and that usually should take about 45-50 min.

Notes

You can pick a variety of bell peppers. Red taste sweeter and yellow is a in between sweet and bitter, but green one has a slightly bitter taste. All three colors will give you a different taste profile.
