Delicious and simple Cranberry-Lemon Scones. They are easy to prepare and don’t require much time to prepare for a nice breakfast or snack. The cranberry and lemon combination will taste refreshing and the buttery tasty will give it a finishing touch to your day.

Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup cranberries
  • 2 small lemons (Lemon zest)
  • 1 cup heavy cream
  • 1/2 cup butter
  • 1 tsp vanilla essence

Instructions

  1. Preheat oven to 390 F or 200 Celcius.
  2. Grate you lemons for zest and add them to a medium sized bowl.
  3. Cut your cold butter into cubes.
  4. Add your dry ingredients flour, baking powder, sugar, salt and cold butter and crumble it together.
  5. Once combined add you vanilla essence and cream together and combine them together to a malleable dough. Do not over knead them or else your scones will become tough.
  6. Flour your surface and place your dough on it. Roll it out to 3-4 inches. You can either form a circle or a square and cut them in whatever shape you like. I cut mine into triangles.
  7. Place them on a baking sheet with some space in between.
  8. Bake them for about 15-17 minutes or until golden brown.
