Celeriac-Carrot salad is a dish made for breakfast or in between meal times. If you can not eat bread, then you can substitute it with red bell peppers. This dish is best consumed within 2-3 days, since homemade mayonnaise will go bad during that time.

Celeriac-Carrot Salad Ingredients

Mayonnaise: You can always choose to use store bought mayonnaise. In case you want to attempt homemade mayonnaise you need to look out for a couple of things. First, get the egg as fresh as possible. Second, pour in the oil as slowly as possible into the egg yolk or else it will split.

Dijon Mustard: It gives the mayonnaise a spicier taste and can also be added to store bought mayonnaise.

Salt: Coarse Sea salt for me personally taste the best. When mixing in coarse sea salt, be aware of the amount you put in since it needs time to dissolve and has bigger chunks of salt in it.

Celeriac: Grate your celeriac as fine as possible and squeeze out the liquid well. Add it to the mayonnaise immediately and mix it in to avoid having the celeriac turn black/brown.

Carrots: The carrots will add some slight sweetness into your salad and some crunch to it.

Ingredients

Mayonnaise

  • 200 ml vegetable oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon salt

Salad

  • 2 medium celeriac
  • 1 big carrot

or

  • 2 small carrots
  • 1/2 teaspoon black pepper

Instructions

Mayonnaise

  1. Place your egg yolk into a bowl and add salt and mustard to it.
  2. Drizzle oil slowly into it the egg yolk and incorporate it slowly.
  3. The consistency will get thicker and mayonnaise like.

Salad

  1. Grate your celeriac with the finest grate setting to get thin strands. Once grated, you will need to squish out the liquid from it.
  2. Grate your carrot.
  3. Add your mayonnaise and grated carrot to the celeriac.
  4. Season with black pepper and additional salt, if needed.

Notes

Make your mayonnaise first so that you can add your celery right away. If you miss that part the celery will turn black/brown.
