Apple Pie Pockets

When you are too lazy to make a whole apple pie, then this is for you! All you need is some apples and puff pastry with some spices.

Ingredients

  • 400 g puff pastry

Filling

  • 3 granny apples
  • 2 tablespoon brown sugar
  • 1 tablespoon cinnamon powder
  • 50 g butter
  • 50 g raisins

Eggwash

  • 1 egg yolk
  • 1 tablespoon milk

Instructions

  1. Cut your apples into medium sized cubes and add them into a bowl.
  2. Add your sugar, cinnamon and and raisins to your apples and give them a good so that your spices are evenly coated.
  3. Heat your pan and add your butter. Once the butter is melted add your mixture and cook it for 8-10 minutes or until your apples are slightly cooked. Don’t overcook them.
  4. Let your mixture cook off a little or else it will melt into your puff pastry.
  5.  Cut your puff pastry into 8 rectangles and fill four rectangles with your mixture. Leave enough space on the edges.
  6. Mix the egg yolk with Milk and brush the edges with your egg wash. Put a rectangle sheet of puff pastry on top and use a fork to seal the edges.
  7. Cut diagonals into your pastry to allow the steam to exit and brush the top with egg wash. Continue with the rest.
  8. Bake at 200 C for 20 minutes or until golden brown.

Notes

I made a big apple pocket. You can also make them smaller instead, just make sure not to put too much filling into it.
