A quick lazy apple pie pockets recipe, when you feel like having apple pie without making the pastry dough. Serve it with a scoop of ice cream or vanilla cream. This recipe is for kids, who desire a quick dessert and you can choose the amount of sugar that comes in.
Apple Pie Pocket Ingredients
Granny apples: Granny apples are known to be on the sour side. Yet they have a crisp consistency and due to the sourness are ideal for apple pies, cobblers and other sweet dishes.. They don’t disintegrate and keep their shape and bite.
Brown sugar: Brown sugar gives those pockets more of a caramel taste, then white sugar.
Puff pastry: I used store bought puff pastry, since I wanted this to be a quick recipe. Making your own puff pastry will be time consuming, but result in a better quality product.
Raisins: There is not much to say about raisins. I like to soak mine with some vanilla essence and water to plump them up a little.
Butter: Use unsalted butter for your apple pie pockets, since you cannot control the salt content of the butter.
Ground Cinnamon: You are free to use any ground cinnamon you can find in the store.
Eggs: A tip of mine is to let the egg yolk be at room temperature. It will make is mix with the milk easier and brushing on the pastry won’t be a pain.
Raisins: Make sure to soak your raisins a little before adding them to your apples. When they plump up a little it will be a nice bite of sweetness.
Note: Some of you may not enjoy raisins or granny apples and instead you can use a different type of apple. Make sure to look for a firm cooking apple and one that doesn’t disintegrate. You can omit raisins and switch them out with cranberries or almond chips.

Ingredients
- 400 g puff pastry
Filling
- 3 granny apples
- 2 tablespoon brown sugar
- 1 tablespoon cinnamon powder
- 50 g butter
- 50 g raisins
Eggwash
- 1 egg yolk
- 1 tablespoon milk
Instructions
- Cut your apples into medium sized cubes and add them into a bowl.
- Add your sugar, cinnamon and and raisins to your apples and give them a good so that your spices are evenly coated.
- Heat your pan and add your butter. Once the butter is melted add your mixture and cook it for 8-10 minutes or until your apples are slightly cooked. Don’t overcook them.
- Let your mixture cook off a little or else it will melt into your puff pastry.
- Cut your puff pastry into 8 rectangles and fill four rectangles with your mixture. Leave enough space on the edges.
- Mix the egg yolk with Milk and brush the edges with your egg wash. Put a rectangle sheet of puff pastry on top and use a fork to seal the edges.
- Cut diagonals into your pastry to allow the steam to exit and brush the top with egg wash. Continue with the rest.
- Bake at 200 C for 20 minutes or until golden brown.

I made a big apple pocket. You can also make them smaller instead, just make sure not to put too much filling into it.
